into the swing of things! But on a happier note, I cannot wait
to be back in town tomorrow and spend it with all of my sweet
family! & Did I mention fish fry?! Um, hello? YUM!

My Tuesdays & Thursdays are my longer days, and with
my school schedule back to back 11:00-3:20 with no breaks
I usually try to incorporate an easy midday snack into my lunch
to eat while I'm walking to class! Oranges or any fruit/veggie are
perfect for a rushed, still healthy, snack on the go.

Vanilla Chai VegaOne & Laptop Lunchbox #5

Starting another Monday already.. I swear I don't understand
how quickly Monday comes back when it was just Thursday!!
But to start this Manic Monday I decided to use my new Vega One
Vanilla Chai!<- Click! I  mean, after a weekend full of football & food
I definitely needed to make up for that! I think personally I like the
Chocolate Vega One <- Click! better, however this is very smooth and tasty
with the mixed frozen fruit I blended it with!

Homemade Granola Recipe!

Finally Friday!! This morning started off with a mug of
Oatmeal (shocking I know) with yummy coconut!

Oatmeal with Shredded Coconut & PB2

______________________________
Calories: 244
Ingredients:
1/2 Cup Dry Oats
2 Tablespoons Sweetened Coconut
1/4 Cup 2% Milk
1 Tablespoon PB2
______________________________

For directions, follow my oatmeal recipe <- click
I also wanted to share my granola I love to add into my oatmeal
today! It's really simple and great to cure that sweet tooth fix!

____________________________________
Ingredients:
2 Cups Old Fashioned Oats
1 Teaspoon Cinnamon
2 Teaspoons Vanilla
2 Egg Whites
1 Tablespoon Maple Syrup
1 Cup Dried Cranberries
1/3 Cup Sweetened Shredded Coconut
1/8 Cup Crushed Walnuts
____________________________________

I like a lot of fruit&vanilla in mine, however this recipe
is easily adaptable! You can switch the cranberries out for
any dried fruit or a bunch of dried fruit! I added 1/8 Cup of crushed
walnuts but I forget they're even in there, next time I make this
I will definitely opt for a bigger nut like pecan halves.
Preheat the oven to about 275 while preparing all of the ingredients.
In a large bowl mix the oats, cinnamon, vanilla, & maple syrup together.
This can get pretty sticky, however I found it worked better using my hands.
After it is all incorporated add the cranberries, coconut, and walnuts.
Put in the 275 oven for about 30-45 minutes checking and stirring every 15 minutes.

Enjoy!

Lara Bars & Laptop Lunchbox #4

Yesterday afternoon while I was fighting the urge
to take a nice, relaxing nap after I got home from work
I decided to try one of my newest purchases, a LARABAR. <-(click)
After finding out all about them on their website, ^ I decided I wanted
to buy a few while I was at Sprouts over the holiday weekend. I am so
happy I did!! The bar I tried yesterday, "Lemon Bar" <-(click) was the
perfect combination of chewy, sweet, and tangy! & To add, I absolutely
love the fact that this product only contains necessary ingredients!
The Lemon Bar's only ingredients are dates, cashews, almonds, and real lemons.
You can't tell me you'd rather eat some grocery store granola bar with tons of
added sugar and ingredients you have never heard, much less can even pronounce.

& Although these bars might turn you off due to calorie count and fat grams
They are soo filling and kept me full&focused to get through all of my
20 page article & start setting up my presentation, when otherwise I would
have been struggling to keep my eyelids open, and me out of my bed!

Egg Salad & Salad

For today's lunch I decided on Egg Salad, Salad, some fruit, and Chobani yogurt.
The Chobani will count as my snack for the day since I'm staying later
to work on a group presentation. Given that I have breakfast at 7:00am,
work until 11:00, and have class until 2:00 or 3:00 I need something
to  keep me full and my brain focused during my classes.

Laptop Lunchbox #3

How is it only Wednesday?! For a 3 day week it sure
is dragging by!! However, my slow week is probably
due to the ridiculous amounts of work, reading, and presentations
that are already overwhelming me. I mean seriously.. it hasn't even
been two weeks people!! Luckily I started another loong school
and work day with this filling, satisfyingly sweet breakfast!

Oatmeal with Strawberries & Blackberries

But!  To make this day a little better my tickets for the

Seriously I could not be any more excited than I am
to see their tour. Who couldn't love the Fab Five?! Go 'merica!

Laptop Lunchbox #3

Calories:345
Ingredients:
(Clockwise)
2 Tablespoons Kraft Light Raspberry Vinaigrette
1 Cup Of Broccoli
1 Orange
1/2 Cup Of My Roasted Chicken <-
2 Boiled Egg Whites
1 Celery Stalk
1 Serving (2 TBS) PB2 <-
___________________________________________

First off, woah, I know 345 calories sounds like a lot of
calories especially for a lunch with almost all fruit and veggies
it looks like. However, the orange (~62 calories) was my after
morning snack (about 12:30) so it's actually under 300 calories.
I am loving pb2 still! I feel like such a little kid with celery and peanut
butter, the whole trick a kid into eating veggies trick. However, unlike a
normal serving of peanut butter, lets just say Jiffy, 2 TBS = 190 calories!!!
Seriously that's almost my whole lunch! PB2 for 2 TBS is only 45
calories! A great addition, or sweet tooth treat for anyone without the
unnecessary oil fats. &Yes, oils and nuts are the "good" fats, but why add
in extra oils and fats whenever this product is the pure peanut form
with only THREE NECESSARY INGREDIENTS. Come on, perfection.

Hope y'all enjoy!
