Work & School 7:00a.m - 3:20 then a nice,
extremely boring 4 hour drive home for a wedding!

Since last time I went home my sweet boyfriend surprised
me with roses, I decided I'd do something in return!

Skinny Funfetti!

Ryan and I are the complete opposite whenever it comes
to food. He could eat McDonald's everyday, while I
won't touch the nasty, fake stuff! Anyway, he absolutely
LOVES funfetti cake! He doesn't like chocolate (crazy right!?!)
or anything with cooked fruit like cobbler or pie..like I said
definitely opposites when it comes to food!! So I decided to try
and sneak in a healthy recipe on his favorite dessert and see
how it turns out! He'll probably notice, but hopefully he will
like it! I mean, at 110 calories per cupcake... it's perfect!
If you're like me & pintrest all day frequently, I'm sure
you've seen countless different alternatives to this
originally weight watcher recipe! Check out my

First off you will need only 4 ingredients! Healthy
cheap and easy?! Who knew that was possible?

For The Cale:
1 Box Funfetti Cake Mix
12 oz. Sprite Zero
(Or Any Light Diet Drink)
For The Icing:
1 (1.5) SF FF Vanilla Pudding
1 (8oz) FF Cool Whip

Start off by preheating your oven to 350 degrees.
Mix the Funfetti & 12 oz. of Sprite Zero together
in a mixing bowl. It going to look pretty funny,
and fizzy,but I promise that's right! Keep mixing,
by hand or a mixer until all of the lumps are out.
After greasing and flour dusting your pans, pour the batter
all in. Set your timer for ~18 minutes for cupcakes
or if you doing a cake, my two heart pans took about 25.
While the cakes are cooking, start mixing together your
icing. All it takes is dumping both ingredients in a
mixing bowl, and combining until they are smooth!!
Poke with a toothpick after the timer goes off to make sure
they are completely done, let them cool, icing & enjoy
your delicious low calorie, low fat funfetti cupcakes or cake!

Chocolate Pumpkin Spice Coffee & Laptop Lunchbox #13

& I couldn't agree more!
 
 
I am a complete coffee hater, which is weird because,
my Mom & Sister couldn't live without it! &Yes, my hate
of coffee even includes the fake coffee that "doesn't even
taste like coffee" ...Lies. Yes it does, along with that terrible,
terrible after taste!! So this morning I decided I might give it
another chance. &I'm definitely glad I did! I actually liked it!

Chocolate Pumpkin Spice Coffee

Ingredients:
2 TBS Maxwell International Coffee
*I Used Suisse Mocha
1/4 Cup Of Canned Pumpkin
Cinnamon To Taste
Pumpkin Pie Spice To Taste
Water
1/2 Cup Of Almond Milk

I mixed the canned pumpkin with the cinnamon and
pumpkin pie spice in the bottom of my mug until
it was spiced enough for my liking. Then I added in
the 2 TBS of Suisse Mocha coffee and stirred completely.
I added majority water, and used almond milk as a
"creamer" (and also to help hide the coffee taste).
Stir again completely to incorporate everything together
& microwave until desired temperature!

Sausage, Egg, & Biscuit Bake & Laptop Lunchbox #12

 

Sausage, Egg & Biscuit Bake!

Ingredients:
1 lb Breakfast Sausage
5 Eggs
2 cups all purpose flour1 1/2 tsp. baking powder1/2 tsp. baking soda1 tsp. salt1 cup cold buttermilk 4 tbsp. butter1 tbsp. sugar

Preheat your oven to 475 & start completely cooking the pound
of breakfast sausage in your cast iron skillet. *If you don't have
a cast iron skillet, cook all of this is a normal skillet
and then transfer to a oven safe baking dish. As the sausage is
browning, start making your biscuits. You could use already
made biscuits, or crescent rolls, but I found this recipe off of Cooks.com
&loved them!! They're so simple! Click-> Easy Drop Biscuits!
After the sausage is fully cooked, make a open space to start
adding two eggs. Let the eggs fully cook in the pan, then start
incorporating them into the sausage mixture. Continue with
the remaining eggs.  It should look like this whenever you're done!
After that is all done, cover your sausage and egg mix
with the drop biscuit mixture. *Wetting the spoon will
help a lot in this process since the drop biscuits are so sticky!
Make sure to try and cover the entire top showing no sausage & egg!
The recipe said to cook for 10-15 minutes, but mine took about
20 minutes until the top was golden brown. I cut a slice and then
topped with a little bit of maple syrup! So simple but so good!

Wonton Tacos & Sushi

This weekend was exactly what I was hoping for!
Lazy, movies, cooking, and friends!

Did I mention lazy??
 
 
This weekend's weekly meals consists of
Wonton Tacos & Sushi!
 

Wonton Tacos

Calories:57
(not including veggie toppings!)
Ingredients:
18 Wonton Wrappers
1/2 Packet Taco Seasoning
1/2 Lb. 80/20 Ground Beef
(Or Your Preference Of % & Meat
Chicken Would Work Great Too!)
& Any Veggie Toppings!

First off, I preheated my oven to 350 degrees. Then I halved
my pound of ground beef and started to saute it. I also added
some chopped onions into my beef (not pictured & optional).
After the meat was done, I drained it, added a 1/2 packet of taco
seasoning, or your favorite Mexican seasonings! I then started to
add my wontons to my muffin pan and sprayed them each twice
with pam cooking spray to make them nice and crispy!
I cooked mine for about 10 minutes at the 350 heat, however
depending on your oven it might take longer or shoter to crisp up!
* Make sure to keep checking them sometimes the edges would
fall and fold inside which would result in not having a cup like wonton!
I used a normal kitchen spoon and added a heaping spoonful to
each wonton cup (made 18 servings) then added all my veggies!!

Homemade Sushi

Calories: 200 A Serving
(One Roll, Makes Three)
Ingredients:
3/4 Cup Japanese Rice
1 Cup Of Water
1-2 TBS Rice Vinegar
Nori Seaweed
Imitation Crab
Cucumber
1.5 TBS Mayonnaise
Srirachi To Taste

First off start by measuring the 3/4 cup of Japanese
rice and 1 cup water and put it in your rice cooker.
Let it cook completely & let it sit for at least 15 minutes
in the rice cooker after it clicked. Add the rice to a non metal
bowl and let it cool. Start julienning your cucumber & crab (cut
into long skinny strips). After rice is cool add the first tablespoon
of the rice vinegar and mix well, but do not make it mushy.
Using your fingers, grab some of the rice, if it doesn't stick
to them add the other tablespoon. The rice MUST be super sticky!
After rice is sticky enough, cut your nori in half. Make sure to wet
your hands completely before adding rice to the non shiny side of the
nori or you will not be able to get anything accomplished!
 After the rice is completely covering the seaweed, except
leaving a little open around every edge, flip it over!
Start adding the Crab & Cucumber (or whatever ingredients
you want to!) Shrimp, Avocado, or Salmon would all be great!
I love adding chili sauce, or making a spicy mayo sauce
(a combination of mayonnaise and chili sauce)
I use plastic wrap to help me roll it tightly, due to not having
the actually sushi roller they use. It also is a great help
whenever you are trying to slice it without smashing it!

Thank gosh my last test of the week is OVER!
I don't think I'll ever understand why every teacher
decides to have their exams on the same week/day!!
Okay..okay.. enough of my rant. Now on to this adorable
little beggar! Since he is my first puppy to ever own,(besides
our family dog that just passed away recently at 14 years :(  )
 I did not want to give him table scraps because they get so
darn annoying (see begging picture below)! My Mom always makes
fun of me for feeding Brax veggies & fruit as "table food",
but hey! at least he'll be healthy and it's not as good as chicken!

Pumpkin Oatmeal & A Weekly Meal Plan

You know you live in Texas whenever it's 84 degrees
and you're already whipping out the pumpkin&gumbo!
But hey! I'm not complaining one bit! Bring on the Fall!
 

Pumpkin & Walnut Oatmeal

Calories: 230
Ingredients:
1/2 Cup Of Old Fashioned Oats
1/4 Cup Of Skim Milk
Water To Get Desired Texture
Cinnamon To Taste
Pumpkin Pie Spice To Taste
~3 TBS Of Canned Pumpkin
4 Walnut Halves To Top

I followed my normal oatmeal recipe <-- click and
cooked it until I would normally be finished. Then,
after it was to the right consistency I wanted, I stirred in
the 3 tablespoons of canned pumpkin.  Definitely my new
 favorite oatmeal! Perfect for this weeks cooler Texas weather!
 
This weeks weekly meals are Chicken Salad & Italian Sausage!

Chicken Salad!

Ingredients:
1 Can Of Tyson Pre Cooked Chicken
2 Celery Stalks
1 Cup Of Green Grapes
(I Usually Use Purple, But I Had Green)
A Handfull Of Walnuts
1 TBS Mustard
1 TBS Mayonaise
(I HATE Mayo, But It Needs The Texture!)

Italian Sausage With Onion & Bell Pepper

Ingredients:
1 Package HEB Mild Italian Sausage
1 Onion
2 Bellpeppers
___________________________________

 
I cook my sausage on medium heat in a little bit of water
(a little less than halfway up) to help cook the insides as fast
as the outside. I definitely don't want any raw pork for dinner!
I let the sausage cook for about 15 minutes, or until the
water has all cooked out. Putting on a lid will help cook the
inside of the sausage too! After the water has cooked out I
like to turn up the heat to about 7 or 8 to get good, crisp outsides
on the Italian Sausage. After they are done I put my sliced onion
and bellpeppers into the little bit of grease left over from the sausages.
I just saute them until desired transparency.
Put it all on a bun and enjoy!

Almond Oatmeal & Laptop Lunchbox #9

Another Monday here again! Lucky for me, my weekend was
just what I needed! Unfortunately I came back to
a Monday exam, an essay due Tuesday, along with Wednesday &
Thursday exams as well. So I apologize ahead of time for my
complaining, short, probably 90% complaining posts this week!
But look at that sweet nakey groomed baby!
He also got a new hedge hog toy.. &already can't part with it!
 
Saturday night after a delicious shrimp & fish fry, Ryy decided to
surprise me with flowers and ice cream!! How sweet right?!
Btw, if you ever get the chance, make sure to try Pecan Praline
Ice Cream from Sertinos...Seriously, Heaven for your taste buds!!
Somehow this weekend we also managed to redo a hutch
we bought Saturday morning. I was soo excited!
I absolutely love DIY projects & redoing old furniture!
Can't wait to see what it looks like in my apartment!
This weekend was seriously full of surprises! Coming
home on Sunday I was greeted with my package from
Chobani! 12 Chobanis are now stocking my fridge waiting
for me to devour them! Not to mention all of my favorite flavors!!
If you haven't tried Chobani Champions you must!
(especially the chocolate!!!) Only 100 calories & a perfect snack!

that LARABAR sweetly sent me... O.M.G.
It was packed full of nuts and banana I probably could have
eaten 3 of them right there. But I didn't.. unfortunately.
I honestly felt like I was eating dessert or candy.
Perfect amount of sweetness with the mega crunchiness
of all of the walnuts, almonds, and pecans. Also, it is
an amazing, (only 190 calories) healthy cure to that sweet tooth!

to park in Guam because the parking lot was already full at 6:50a.m!
I thought college students liked to sleep?! Then I got a parking ticket
for my "improperly placed" parking sticker. Luckily, I got it appealed.

Yesterday I got a package in the mail from LARABAR!
I was so excited! I've posted about their delicious, healthy

Today I packed the Bananas Foster Uber Bar <--click! Which I
cannot wait to try, I love anything Banana! &The best part..it
only consists of necessary ingredients!! Walnuts, almonds, brown

honey, sea salt, cinnamon. Can't wait to tell you all about it!
